This cheese has a story: Originally made as an attempt to emulate the funky washed-rind St Paulin of the French Monastic cheese making tradition, Kenny thought he had nailed it! As weeks went by and the aroma started to intensify, Kenny’s mom Mary Rose made such a fuss about the smell, that she made him reign in the washing process. We now make a slightly less offensive version of it and that is now known as St Jerome. It has become a real favorite among our followers. The rind is smooth, the paste buttery and dense, with slightly bitter floral notes. Cheddar lovers will enjoy it, as well as those who are looking for a gouda-like creaminess with a good long and complex finish.
